  1. In a medium saucepan, bring the quinoa and water to a boil.
  2. Reduce the heat to low, cover the pot, and let the quinoa simmer for 15-20 minutes, or until the water is absorbed and the quinoa is tender.
  3. In the meantime, preheat the oven to 400°F.
  4. Rub the chicken breasts with olive oil and sprinkle them with oregano, salt, and pepper.
  5. Place the chicken breasts on a baking sheet lined with parchment paper and bake for 20-25 minutes, or until the chicken is cooked through.
  6. Remove the chicken from the oven and let it cool for a few minutes. Then, slice it into thin strips.
  7. In a large mixing bowl, combine the cooked quinoa, red bell pepper, cucumber, red onion, kalamata olives, feta cheese, and parsley.
  8. In a small mixing bowl, whisk together the lemon juice, red wine vinegar, Dijon mustard, garlic, olive oil, salt, and pepper.
  9. Drizzle the dressing over the quinoa salad and toss to combine.
  10. Add the sliced chicken to the salad and toss gently.
  11. Serve the salad chilled or at room temperature.
